Pork With Mustard Sauce Recipe


If you like Tenderloin Pork, here's a way to jazz it up while holding down the calories.

Ingredients
* 2 pounds pork tenderloin
* 1/2 tsp. garlic powder
* 1/2 tsp. black pepper
* 1 and 1/2 tbsp. olive oil, divided
* 2 tsp. mustard seed
* 1/8 cup wine vinegar
* 1/2 tsp. prepared** mustard (Dijon provides best flavor)
* 3 tbsp. finely chopped onion
* 1/2 cup fat-free chicken broth
* 1/2 tsp. cornstarch
* 4 to 5 cups cooked rice
**Prepared mustard is regular mustard spread like you would use on hot dogs.

Directions
1. Trim all fat from tenderloin. Cut crosswise, 1/2 inch thick and press flat with rolling pin or glass. Sprinkle both sides with black pepper and garlic powder.
2. Heat 1 tablespoon olive oil in a large, heavy skillet. Add tenderloin slices and saute for 3 to 4 minutes. Turn to other side. Cook until meat is no longer pink. Remove from pan.
3. Add mustard seeds to pan and heat until the seeds begin to make a popping sound. Add remaining olive oil and onion to pan and cook until onion is clear. Stir in vinegar and prepared mustard and cook over medium heat for about 1 minute.
4. Stir cornstarch into cold chicken broth until dissolved and add to pan. Cook until sauce thickens.
5. Return tenderloin to pan and cook until well heated.
Serve over cooked rice.
