Low Fat Refrigerator Pickle Recipe


Ingredients
* 4 cups of thin sliced cucumbers
* 1/2 cup diced onions
* 1/2 cup white vinegar
* 1/2 teaspoon salt
* 1/2 teaspoon celery seed
* 1 and 1/2 cup of sweetener (Splenda, Sweet'N Low or SugarTwin)

Directions
1. Pack clean sealable jars with sliced cucumbers and diced onions.
2. Bring vinegar, salt, celery seed and sweetener to a boil to make brine.
3. Carefully pour brine mix over cucumbers and onions to within 1 inch of top rim of jars. Seal and allow to cool. Store in refrigerator.
Ready to eat in 2-3 days. Keeps in refrigerator about 2-3 weeks.
