Low Fat Pasta Salad Recipe


Ingredients
* 1 package Corkscrew pasta
* 1/2 cup fresh mushrooms, sliced
* 1 cucumber, sliced
* Low Fat zesty Italian dressing
* 1 onion, sliced
* 1 tomato, diced
* 1 green pepper, chopped

Directions
1. Cook pasta until tender, drain well and rinse in cold water.
2. Mix pasta with all other ingredients in a large salad bowl. Allow to stand in refrigerator 30 minutes before serving.
Note: The mushrooms may be cooked in 1 teaspoon Smart Balance spread (margarine) until tender (about 2 minutes) before adding to salad.
