Low Fat Garlic Potatoes Recipe
Ingredients
* 5-6 potatoes, peeled, cut in chunks* 3/4 cup fat free cheese, grated
* 1 tsp. garlic powder
* 1/2 cup skim milk
* 1 teaspoon chives
* salt and Pepper to taste
* 1/2 teaspoon cayenne pepper
* Smart Balance non-fat cooking spray
Directions
1. Preheat oven to 375 degrees.2. Peel potatoes and cut into chunks.
3. Boil potatoes until tender and drain. Transfer to a large mixing bowl.
4. Add milk and blend with mixer until smooth.
5. Add garlic powder, chives, cayenne, salt and pepper. Mix well.
6. Spray a baking dish with cooking spray and spread potatoes evenly in dish.
7. Bake 20 minutes.
8. Top potatoes with grated cheese. Continue cooking until cheese is melted.
Serve hot.
