Low Fat Chicken and Dumplings Recipe


Great tasting recipe for Sunday dinner and easy on the waistline.

Ingredients
* 2 cups chicken breast, cooked, skinless, boneless
* 2 packages fat-free flour tortillas (or see alternate dumpling method below)
* 1 cup skim evaporated milk
* salt and pepper to taste
* 2 tablespoons Smart Balance Lite Spread (margarine)

Directions
1. Boil chicken until tender. Remove bones and skin and set aside. Reserve liquid chicken was cooked in.
2. Add milk and margarine to broth (liquid that the chicken was cooked in). Bring to a rolling boil.
3. Cut tortillas into 1 inch strips and drop into boiling liquid. Cook until tender.
4. Add chicken and simmer until chicken is hot.
Serve hot.
ALTERNATE METHOD FOR DUMPLINGS
Combine 3 cups of Bisquik mix and 1 and 1/2 cups milk until smooth. Drop teaspoonfuls of mix into the boiling liquid (that chicken was cooked in). Cook until dumplings hold a solid shape (do not brown - remove just before they start to turn brown).
