Low Fat Chicken Soup Recipe
Ingredients
* 2 cups boneless, skinless Chicken* 4 cups skim milk
* 2 tablespoons flour
* 2 tablespoons Canola oil
* 2 pkg. sweetener (Splenda, Sweet'N Low or SugarTwin)
* 1/2 teaspoon salt
* 1/2 teaspoon black pepper
* 1/2 teaspoon garlic powder
Directions
1. Cook chicken in boiling water until tender. Chop in bite sized chunks and set aside.2. In a large pot, combine milk, flour, and oil. Cook on low heat, stirring constantly, until a smooth sauce forms.
3. Add chicken to white sauce mixture. Add salt, pepper, and garlic powder. Simmer for 20 minutes over low heat.
4. Stir in sweetener and simmer another 10 minutes.
5. Taste soup and add salt, pepper and garlic as needed.
If a thicker soup is desired, mix 1 teaspoon cornstarch in 1/2 cup COLD water and add to soup. Stir and cook another 5 minutes.
