Glazed Carrot and Pineapple Recipe


Ingredients
* 1 pound fresh carrots, sliced & cooked
* 1/2 cup crushed pineapple with juice (do not drain)
* 2 teaspoons cornstarch
* 1/2 cup water
* 1/4 teaspoon salt
* 1 teaspoon Smart Balance Spread (margarine)
* 1 tablespoons sweetener (Splenda, Sweet'N Low or SugarTwin)

Directions
1. Slice carrots and cook in boiling water until tender but still firm. Set aside.
2. Place water, pineapple, cornstarch and salt in a saucepan. Bring to a boil, stirring constantly. Boil 1 minute.
3. Add cooked carrots, margarine and sweetener. Cook 1 minute and remove from heat.
May be served hot or cold.
