Glazed Carrot and Pineapple Recipe
Ingredients
* 1 pound fresh carrots, sliced & cooked* 1/2 cup crushed pineapple with juice (do not drain)
* 2 teaspoons cornstarch
* 1/2 cup water
* 1/4 teaspoon salt
* 1 teaspoon Smart Balance Spread (margarine)
* 1 tablespoons sweetener (Splenda, Sweet'N Low or SugarTwin)
Directions
1. Slice carrots and cook in boiling water until tender but still firm. Set aside.2. Place water, pineapple, cornstarch and salt in a saucepan. Bring to a boil, stirring constantly. Boil 1 minute.
3. Add cooked carrots, margarine and sweetener. Cook 1 minute and remove from heat.
May be served hot or cold.
